Back in the kitchen, Milk Street cooks create Senegalese braised chicken with onions and lime (yassa ginaar), which contains layers of sweetness, acidity and spice; and a Senegalese avocado and mango salad with rof, a topping that consists of parsley, garlic, scallions and habanero chili.
